Vegan cooking with Irene

Well, with the looming hurricane I am sure most of you will be inside this weekend with a lot of free time on your hands. Probably watch some movies, have a few beers, play some board games, and maybe do some cooking…if you have power. Better get creative, your gonna need to get rid of that food before it spoils anyway…right? Perfect time to make that raw dish you’ve been wanting to make. Well, if you have power and our website is still up because we haven’t lost power, then we would love see some of your hurricane dishes. Or just share anything with us…we are just going to be hangin out like you are!

Oh and tell us what you think the next apocalyptic event will be to hit the mid-atlantic…

  1. The lady made scrambled “hurricane” tofu this morning http://yfrog.com/kjiifbyj

  2. I’m thinking we’ll try to make lots of nut butters and bean spreads (like hummus) this morning so we have them on hand to eat with rice cakes and sprouted wheat bread. We also have lots of fresh veggies, so we can do salads if we lose power. And if there’s time, I’ll try to make some lentils or mung beans and get that in too….really hoping we don’t lose power! Stay safe, everyone!

  3. Use the hummus to make delicious “Quesadillas.” I’m sure you know the recipe, but in case: take the hummus, spread on a tortilla, put some black beans on it and some salsa. Put another tortilla on top of that and place in frying pan for a few minutes on each side. It’s so good, even better with guac. or fresh avacado. It’s great comfort food during these scary hurrricane days, ha ha.

Power still on and we’re making homemade pizzas: whole wheat crust, olive oil, tomatoes, garlic, spinach, green peppers, mushrooms.

  6. Pizza sounds sooooo good! We still got power too, doesn’t look to bad out, just a lot of rain. We still haven’t decided on what to make for dinner yet. But I think we are going to make cinnamon buns for breakfast!

    • Good idea on the cinnamon buns! I’m going to make vegan french toast – so good and so easy! Please let the power be on so I can have coffee……..sigh.

  7. So since we were sad that the power did not go out, which we were planning it would, we decided to pretend like it did and have baked beans and veggie dogs! They were delicious…sorry no pic, forgot to :(
