Vegan MoFo: African Sweet Potato and Peanut Stew
I recently met Colleen Patrick-Goudreau, author and vegan chef behind The 30-Day Vegan Challenge, when she spoke at DC VegFest and I pretty much fell in love with her instantly. She did such a great job delivering the vegan elevator speech with logic, poise and a sense of humor all rolled into one – I was quite impressed. It’s no easy task to build that bridge for people on a repeat basis, trying to explain to people that the milk on their cereal came from the tit of another species that weighs 1,000 pounds can be exhausting.
So I had to buy her cookbook out of support, and what better gift to guilt your loved ones into going vegan with you (ahem, mom & dad: if you’re reading) than a 30-day vegan challenge cookbook? So before I pass the book over as a gift, I thought I’d test out a recipe or two (or six because it’s Vegan MoFo) first.
I’ve been wanting to experiment more with African recipes, so I settled with the African Sweet Potato and Peanut Stew – amazing! It’s one of those stews that tastes even better the second day around and is incredibly easy to make. Plus, it yields 6 to 10 servings so, leftovers for days or freeze half for later that month.
